Recipe of the Week....Breakfast Biscuit Pot-Muffin

Hola Readers and friends!  As I get acquainted with my new kitchen, I find myself not doing much cooking.  An occasional baked chicken, salmon or tilapia here and there.  Some weeks I just go with frozen dinner foods.

So, it's no surprise when I brag about my daughters culinary skills.  Especially when I am around when she's cooking. She is always whipping up new and exciting recipes surprising the family at breakfast, lunch or dinner.  I'm always telling her she should open a restaurant or cafe.  Since I am no longer staying with her, I miss a lot of her dishes.  But, this past Saturday I had fun babysitting the G-kidz and got lucky!  The daughter and son-in-law went on a long over due night out dancing, so I spent the night meaning I was there for Sunday breakfast. Yum! Yum!


Ingredients
  • 4 Eggs
  • Bacon
  • Pillsbury Biscuit Roll (preferably Homestyle)
  • Shredded Cheese
  • Salt & Pepper
  • Spray Butter


Directions

Preheat oven to 350 degrees.  Place the bacon strips on a foiled cookie sheet and bake for about 15 minutes until the desired crispiness (we like it crispy).  When done to your heart's desire, let it cool for while and go on to the next step.  Let's get on to the eggs!
While bacon is cooling off, time to beat the eggs and add salt and pepper (to taste), a very simple step.  Then put egg mixture aside for a moment and go grab the muffin pan!
Next, it's time to grease the muffin pan.  We used spray butter (the Target brand) but you can use any brand of your choice.  You can even use butter if you'd like.  Open the Pillsbury Grands biscuit roll and place biscuits on each muffin hole and press down gently to making enough room for the toppings!
Now, grab the bowl with the egg mixture and pour over each biscuit keeping in mind not to overflow.  Crumble the already cool-downed bacon over the egg mixture and top it off with cheese.  We LOVE cheese and bacon so we pile it up high!  We used the Fiesta Blend Cheese.  Mmmhhhmmmm!
By this time your stomach is growling of hunger from the smell of the bacon and cheese.  So you place the muffin pan in the oven as quickly as you can and bake for about 10 minutes until muffins rise.  I tell ya when your hungry it can seem like the longest 10 minutes ever.  But then comes the best part....taking them out of the oven and serving them to the hungry bunch!

  3. These look delicious! Have you ever froze them and then reheated? I wonder if they would freeze okay. My boyfriend would love these as a quick grab in the morning on the way out the door for work.

      You know, I've never tried freezing them because there was never any leftovers. But that is an awesome idea though, very practical. I think I will try it next time I bake them. If you try it first, please do let me know how it works out. Thanks :)
