Recipe of the Week: Breakfast Skillet - Low Carb/Wheat Free

I don't know about you but I believe that breakfast is the most important meal of the day.  I've experienced skipping breakfast as well as having a good breakfast and I have to say the days I had breakfast were a mile more energized then the days when I skipped breakfast.  That is why I always make it a point to have me a good breakfast every day.  I have made it a habit to get up a little extra in the morning to have time to prepare me a good healthy breakfast.  I take it to work and eat it at my desk along with my cafĂ© ♥

Here is a superdeeduperdee great breakfast recipe I found over at This Gal Cooks.  It's delish and healthy for ya too...mmmhmmmm.  If you prefer, you can substitute the beef with chicken.

Breakfast Skillet – Low Carb/Wheat Free

Ingredients
Serves 1
  • 1 oz of grilled steak, cut into pieces
  • 1/3 C grilled onions & peppers
  • 3 eggs, beaten
  • 2 tbsp fresh salsa
  • 1 tbsp cheddar cheese, shredded
  • 1 tbsp sour cream
Directions
  1. In a small skillet pan, saute the steak, peppers and onions until they are heated.
  2. In another small skillet pan, scramble the eggs on medium heat until cooked to desired consistency is reached.
  3. Place the eggs on a plate and then top with the steak, grilled onions and peppers, shredded cheese, sour cream and salsa.
